Empress Gin and Tonic

A shot of Empress gin is a deep indigo color.

This amazingly colored drink is Empress gin, which was a Christmas gift from one Pandemic Pub bartender to another! Thank you, Elizabeth!!

I’d never heard of this gin before. It’s made in Victoria, BC and is deliciously smooth, perfect for sipping. I don’t usually say that about gin, even though it’s my favorite. One of the ingredients is Butterfly Pea Blossom, which gives it that deep purple color. Wow. Even better – this gin changes color based on what you mix with it! This is truly the perfect liquor for a painter like me!

Up above, you can see how rich and dark the indigo color is, when the Empress gin is by itself.

Right here, of course the ice diluted the color just a bit, but it’s still a deep purple. Now watch what happens when you add tonic!

It almost instantly turns a much warmer, reddish-purple color! It’s magic! The lighter one has tonic added; the darker one is still plain Empress gin. Though “plain” is hardly the word to describe it!

I am so enchanted by this gin!

I can’t even describe how sophisticated and elegant and delighted I felt while watching Elizabeth make this, and while sipping it.

This bon vivant knows how to have fun, but this was the most transformative drink I’ve had in a long time. It was really like a party in a glass! I’m still marveling over it.

The label promises that there are at least two more color changes in store, depending on the mixer, but I can’t give away all the secrets yet!

  • 3 oz. Empress Gin

  • 3 oz. Tonic

  • Lime for garnish


  • Pour Empress Gin into a glass with ice.
  • Add the tonic and pay attention! You’re in for a treat!!!
  • Garnish with a lime and marvel over how fun and beautiful this cocktail is!
