Golden Sunset

The Golden Sunset cocktail sits on the rail of a porch.

I investigated recipes for this one, and it was billed as “a healthy cocktail”! Should I have known better from the start?

This cocktail is gorgeous, absolutely gorgeous. But it goes down as a FAIL for a few reasons…in the chilling process, I noted that the Coconut Milk began to congeal. At first, I chalked it up to the icy cold spot in my fridge, which is a bit toward the back. I didn’t think much about it, but made a note to self to stay away from that area.

However, when the coconut milk actually continued to congeal in the glass, I knew what was up. You know I don’t like to chew my drinks! But anyway, it’s just not OK. There has to be a fix for this; maybe this should be a hot drink.

Also, the Honey garnish is too heavy, and sank to the bottom. Is there a word for a garnish that appears at the bottom of a drink, instead of the top?

The first couple of sips were nice, something like egg nog, which I love. But a little of this drink goes a long way. At least I got rid of the Sailor Jerry’s!

Ultimate verdict: you can’t have a congealed cocktail. You just can’t.


  • Nip bottle of Spiced Rum

  • Coconut milk

  • Honey

  • Salt

  • Pepper

  • Turmeric

  • Cinnamon

  • Garnish
  • Honey

  • Cayenne

  • Sprinkle of Cinnamon (or Cayenne)

  • Vanilla


  • Heat all ingredients except for rum, and garnish, on stove.
  • Chill in fridge, but not long, since it risks congealing.
  • Add chilled mixture to cocktail shaker with rum; shake and serve over ice.
  • Garnish
  • Stir cayenne into honey and let sit for a time, to meld a bit.
  • Stir in vanilla; drizzle over the top of drink.
  • Sprinkle cinnamon or cayenne for finishing touch.
  • To your health!
