The Story

This is a red-letter day, folks! Long story short, my friend Jamie has been working super-hard to learn some important new skills. Her diligence paid off and she accepted an amazing job offer. Today our Zoom group, which has been meeting every week since long before the pandemic, was able to toast Jamie’s success!

I decided to start this cocktail with Kahlúa, because coffee seems like an office staple. I added a raspberry liqueur which was a gift to the Pandemic Pub. It’s not a sweet liqueur though, and needed a little sweetness to balance it.

I thought orange juice would be good for that, but it needed even more. Simple syrup is always a good solution…

The Mystery

I’ll be perfectly honest in saying that I don’t know how I made the simple syrup here. There was a little container on the counter, with my writing on the lid that read “SIMPLE SYRUP”…and yet…it was very dark and looked nothing like the usual simple syrup that I make. I wondered if the lid had been removed from something else and felt a little squicky about a dirty lid getting passed around to a different bottle…

On my third time past it on the counter, I couldn’t let it go any longer. I opened the jar and sniffed. Unable to figure out what it was, I took a taste with a spoon. It was sweet! That surprised me completely, since it looked like balsamic vinegar.

I think it was simple syrup after all. Maybe I made it with brown sugar? I really don’t remember this at all. Anyway, I’m glad it was there because I needed something sweet for this drink. And it’s in keeping with our pledge, to try to use up ingredients rather than accumulate them.

The Outcome

The drink is fairly sweet, and tastes something like a chocolate orange, even though it looks like a glass of soda. I wanted the orange slice garnish to look like a big sun, and it did. Happy days on the horizon for Jamie!

Ingredients

  • 1 oz Kahlua

  • 1 oz raspberry liqueur

  • 1.25 oz simple syrup (I hope it was simple syrup lol)

  • 1 oz orange juice (about half an orange, squeezed)

  • garnish – orange slice

Directions

  • Simple Syrup
  • If you’re lucky enough, you’ll find a batch in the fridge that you already made! This batch was dark, so I think I used brown sugar (instead of my usual mixture of half cane sugar and half monk fruit) and water. About a half cup of water, and a quarter cup each of the two sweeteners. (Regular sugar is my preferred method, but Elizabeth prefers monk fruit. Monk fruit alone will crystallize, so make sure – if you go this route – you use no more than half monk fruit!) Mix the sweeteners and water and bring to a boil. Stir until the crystals dissolve, and let cool.
  • Add the other ingredients, except garnish, and shake with ice.
  • Garnish with a huge orange slice; pour over ice.
  • Toast to *much* greener pastures!
