Lavender 75

A Lavender 75 is a champagne cocktail with lavender simple syrup and lime juice.

This delightful, light drink was inspired by the French 75, with the addition of lavender right from Elizabeth’s garden. Great for summer, especially here in Washington where lavender really comes out to play at this time of year!


  • 4 or so oz. Champagne

  • 1 or 2 oz. Lavender Simple Syrup (below)

  • Juice of several Limes (to taste)

  • Spring of lavender for garnish

  • Lavender Simple Syrup
  • Lavender flowers and buds

  • 1 c. Sugar

  • 1 c. Water


  • Ahead of time (if you can) boil the sugar, water and lavender flowers; this gives it time to cool. I like to make extra, to ensure future cocktails, but if you don’t want to do that, you can cut the recipe in half, as long as you use roughly equal parts water and sugar.

    Let the mixture cool on the stove; strain the flower parts out; then chill in the fridge.
  • Combine syrup and lime juice; pour into champagne flute and gently mix all liquids (taking care not to overly agitate the champagne).
  • Garnish with lavender and enjoy!
